Frugal Food Diary - Do It Your Way Quiche, 22p per serving

I've decided I'm going to try and keep more of a record of the food we cook and eat here at Thrift Cottage. Not only will I be able to feel more "accountable" and stay on track, it might serve as a good reference when I'm meal planning and can't think what to make!

Today I'm starting with a quiche I made today to use up what I call "fridge gravel". Mr. Thrift will take some to work for lunch, and any that isn't eaten in the next couple of days can be frozen for a quick ready meal later in the month.




Quiche is a meal that I consider to be "almost free" for us. Flour and spread is cheap, our eggs come from our hens and it only requires a scant smattering of cheese to boost it's rich, savoury flavour.

It's a great way to use up vegetables or leftover meats that linger in your fridge, unloved and unwanted. Chuck them in a pastry case with cheese and all of a sudden you have a very grateful fiancé!

Serves 6. Total cost: £1.27 (based on today's supermarket value ranges), 22p per serving.

Ingredients:

2-3 handfuls of vegetables/meat - here I used about 7 mushrooms, a large onion and a few cherry tomatoes
1 handful of cheese, any kind
2-3 eggs
100ml milk
Seasoning/herbs

For the pastry:

170g plain flour
85g butter
chilled water
  • Preheat oven to 220 degrees C.
  • First rub the butter into the flour using your fingers. Then add water, 1 tbsp at a time until you can work the pastry into one large dry ball. You shouldn't need more than 3 tbsp of cold water.
  • Put the ball of pastry in fridge to chill.
  • Slice or dice your fillings (gently sauté them with a little garlic or herbs if they are raw). Whisk together with eggs, milk, salt, pepper, herbs (if available) and set aside.
  • Roll out pastry and line a greased quiche/flan dish with it. Fill with one layer of dried chickpeas or beans.
  • Bake for 10 minutes.
  • Remove from oven, pour off chickpeas (these can be re-used for blind baking in future) and fill pastry case with egg mixture.
  • Turn down oven to 160C and bake for 30 minutes, or until set and golden. Enjoy with salad or baked beans!




Enjoy with a salad or, if you're feeling naughty, some homemade chips and baked beans.

      We are just starting to muster up the energy to get going again with this years growing season. With full time jobs it's not easy!

  2. Hi! Have just spotted your Blog and I am now following with interest. Have you ever tried the Crustless Quiche? might help if you dont fanvy making the pastry? It tastes the same too! Though I need to stop adding so much Cheese..... ;)
