Falafels. Serves 6-8- approx 20p per serving

Falafels are a favourite in this house! Not only are they vegan, filling and delicious but they are dirt cheap.

2 tins chickpeas - 50p (buy when 4 for £1 on the World Food Aisles)
2 small onions, chopped - 6p
2 cloves garlic, chopped - 2p
EITHER 2 heaped tsps of hot chilli sauce or 1 tsp of chilli powder and 1 tsp cumin - 4p
1 heaped tbsp dried parsley (or one bunch fresh from your garden)  - 15p
4 heaped tbsp flour, any kind - 6p
salt and pepper...don't be shy!
oil, to fry (I fry in oil then drain it off when cool and store in a jar ready for the next batch, so not very much is used at all) If on a diet you can just bake with a little oil on a baking tray

Blitz everything except for the oil in a blender, or mash in a bowl until smooth.

Drop big blobs into a pan of hot oil and fry until brown. That's it!

Serve with lots of fresh salad, wraps and hummus or over rice with a homemade tomato sauce. Yummy!
