Super Easy Celebratory Lemon Sponge Pudding

These next few days I'm going to have trouble sleeping, push my other half to the edge and be listening out for the postman. I'm expecting the agreement to come through for My Very Own Allotment.

So here I present to you, plot number 15. The most beautiful thing I've seen in my entire life.


The photo above faces North, so hopefully the plot will provide lots of sun for all my lovely veggies. I'm going to get busy planning my plot!

To celebrate, I made microwave pudding cake. It can be doubled, tripled, or halved and cooked in a mug to satisfy naughty cravings. It's light, moist and oh so easy!

Microwave Lemon Pudding

Serves 2 - 29p (15p per serving)


So eager to eat I started putting my phone away during the photo!


50g butter/marg 8p
50g sugar (granulated is fine) 3p
50g plain flour 2p
1/2 tsp vanilla essence (optional)
zest of half a lemon (or lime, or orange!)** - 11p
1/2 tsp baking powder - 2p

2/3 tbsp of jam or curd. 3p




  • Pop a microwaveable mixing bowl with the butter in for a few seconds to soften it.
  • Add the sugar and mix thoroughly.
  • Add all the other ingredients except for the jam/curd and mix well.
  • Pour into a microwaveable dish and cook on high for 90 seconds
  • Pop the jam in a mug and microwave for thirty seconds until runny.
  • Serve each person half the cake and a dollop of hot jam.
Yes...that's it! This time I adjusted it slightly by instead mixing 2 tbsp of lemon curd into instant custard. It felt like a real treat, and was very cheap!

** I wasn't sure how to work this out, as the whole lemon is still left inside. I just halved the price of a lemon as you only have half an "intact" lemon left.
